Pimento

The pimento has been

plucked from praise

A non-potent pepper

with a plethora of flavor

I like mine prepared

with piles of cheese

sandwiched in between

portions of potato bread

slightly toasted please

Or pack it high

in sleeves of endives

for a crunch with punch

This poor pickled pedigree

could use some popularity

My love for those pleasing slivers

I could eat straight off my plate

comes from momma’s cooking place
